Kitchen Closed: Dan Nicholl cooks with Chef Luke Dale Roberts

Share in the biggest moment of Dan Nicholl’s culinary career as he cooks with possibly the country’s top chef, Luke Dale Roberts.

Dan, who admittedly is able to burn a Greek salad at times, prepares a fabulous beef Wellington while Luke guides him through the process. And you can certainly make this too! After pan-searing the beef, Luke shows you how to sweat onions and create mushrooms duxelle, before wrapping it all up in pancetta and puff pastry. In Luke’s own words: “massive yumminess”.

The British-born chef is synonymous with award-winning gourmet fare and his talents have turned all his business endeavours to gold. His latest restaurant, Cape Town’s The Test Kitchen, finished 44th in the world and 1st in Africa at the World’s 50 Best Restaurant Awards – the Oscars of restaurant awards.

Luke is also the man behind excellent restaurants like The Pot Luck Club, The Shortmarket Club, Commissary, and Salsify at The Roundhouse – all now run by his protégés.

Of course, things have certainly changed in the restaurant industry, so Luke recently started preparing and shipping gourmet hampers across the country. Teams rotate when preparing the hampers to minimise contact. He’s also been cooking meals for The Haven, which not only helps hungry people but has given Luke a sense of purpose while not being able to work.
